We cook up biryani in a traditional way using a cooking pot with a narrow neck and round bottom called ‘deg', hence the name ‘Degchi'.
‘Dum’ simply refers to the way our biryani is cooked. This slow style of cooking was introduced in India by the Moghuls in the 16th Century. A lengthy process but essential to bring the aromatic spices and delightful flavours.
